UPDATE: Just as we were all giving up hope that we’d never see Rosie (or Oscar) open up their taco shop, we have been given a holiday surprise! Sandwiched between Urban Bistro and Ciao Grazie on Verrado’s fabulous Main St, Rosie’s Taco Shop is now open and first reports are that the food there is really good. Prices are decent and the hours are extraordinary open 7 days a week from 7 am to 9 pm. That is truly an ambitious schedule. You can check out their menu on their website HERE.
As it turns out, Oscar Ruiz, his wife Rosie, and their three sons: Fabian, Damian and Ivan, are local Verrado residents who live within walking distance to their new restaurant. “Rosie’s Taco Shop” on Main St is their first-of-its-kind concept presenting a diverse menu featuring some of Rosie’s favorite recipes.
At Rosie’s you’ll find their bowls are filled with crisp romaine lettuce, black beans, rice, tomato, guacamole, sour cream, shredded cheese, with a protein of your choice. Other dishes include a cali burrito, quesa birria Taco and an elote cocktail on the side with grilled corn, aioli aged cotija cheese, lime and chili powder. Save room for desert, with churros, rice pudding, and cheesecake chimis. Mainstays on the menu still include their popular breakfast burritos, tacos, quesadillas, chips and dips, nachos, fries, kids’ meals and more.
Oscar explains: “We’re not a national chain. We consider ourselves a mom-and-pop operation with a history that traces back to my father’s first taco shop in 1982. That means we start from scratch with fresh ingredients every day. On Main Street, our staff will start prepping by 5:30 a.m. to be ready to open our doors at 7 a.m. for breakfast seven days a week.” “Even more, nothing goes on the grill until you place your order,” Rosie added. “We don’t let food sit in warmers. Most importantly, we are committed to affordable food and good portion sizes, as we welcome our friends and neighbors to visit us several times a week.”
While Rosie’s first location on Main Street offers comfortable indoor seating and take-out, once the kitchen has been running for a few weeks, online ordering will launch for pickup.
